I came across this recipe about a year ago, and have recently made more batches of it as I already have all the ingredients and I’m always amazed at how expensive pre-made salad dressing is! I also love that this dressing goes well on more than salads and can be used over rice or pasta dishes.
If you can’t find miso at your local grocery store, check your local health food store or Asian market.
Mellow Miso Dressing
- 1/2 C Olive Oil
- 1/2 Lemon, juiced
- 1t Apple Cider Vinegar (optional)
- 2T Mellow White Miso
- 1T Ginger, grated
- 1T Turmeric, grated or 1/2t powdered
- 2 Garlic Cloves, crushed
- Salt to taste
Smash and whisk together all ingredients with a fork. I mix it in the measuring cup and pour it into an empty salad dressing bottle.
