Simple Garlic Mashed Potatoes
8 large red potatoes, peeled and cubed
4 tablespoons vegan margarine
1/2 cup plain non-dairy milk (use more or less based on your preference)
1/4 cup vegetable broth or not-chicken-broth
1/4 teaspoon garlic powder
1/2 teaspoon sea salt
freshly ground black pepper, to taste
Fill a large, deep pot halfway up with water, and add cubed potatoes to the pot.
Bring water to a boil over high heat.
Boil potatoes for 15-20 minutes.
If using not-chicken-broth, use this time to prepare it.
When the potatoes are done, drain them, reserving 1/4 cup of the boiling water.
Place the margarine in a large mixing bowl.
Add the potatoes to the margarine in the bowl
Mash the potatoes using a hand blender or standing mixer on low.
Slowly mix in the milk and broth, stopping to scrape down the bowl along the way.
Add the garlic powder, salt, and pepper and mix on high for 1-2 minutes, until nice and fluffy.
Serve immediately. If serving later, place mashed potatoes in an oven safe dish and warm in the oven at 350F fro 30 minutes.
